Recipe: Rainbow Qunioa Salad

Quinoa is a nutrient packed food filled with protein, iron, calcium and fibre to support your gut health, energy and mood. These nutrients are also needed in higher demand during pregnancy, postpartum and breastfeeding! 

This salad is a great lunch or dinner option, that will please the whole family. If you have little ones starting solids, you can put a little cooked quinoa aside and mix with some mashed avocado so they can also enjoy!

Ingredients: 

300g quinoa (any colour is fine), cooked to packet instructions

1 punnet of mixed coloured tomatoes, halved

1 carrot, shaved into ribbons

½ cup jarred roasted red capsicum, sliced

1 Lebanese cucumber, chopped

1 avocado, chopped

1 large handful of fresh mixed herbs (parsley, mint, basil, coriander)

¼ cup marinated goats fetta

¼ cup walnuts, crushed

2 tsp balsamic vinegar

1 garlic clove, crushed

3 tbsp olive oil

Directions: 

1. In a large mixing bowl combine cooked quinoa, tomatoes, carrot, capsicum, cucumber, avocado, herbs, fetta and walnuts

2. To make dressing, combine vinegar, garlic & olive oil

3. Pour dressing over salad and season well with salt and pepper

4. Serve warm or cold
