Recipe: Carrot Cake Bites

Yum! Who doesn't love carrot cakes? These little bites are a healthy, but still yummy, twist on the classic carrot cake. They make the perfect go to snack, can be eaten with one hand (perfect for the breastfeeding mama) and can be frozen!

These carrot cake bites are gluten and dairy free! Plus they are loaded with omega-3 fatty acids from chia seeds and walnuts to reduce inflammation, support energy and reduce brain fog.

Carrot Cake Bites: Makes 12, Cooking time 35 Mins

Ingredients 

1 ½ cups almond meal

1/2 cup brown sugar

1/2 cup chopped walnuts

2 tbsp chia seeds

1 tsp cinnamon powder

1 tsp ginger powder

1 ½ tsp bi-carb soda

1 tsp vanilla extract

1/4 cup coconut oil, melted

1 egg

½ cup almond milk

1 medium carrot, grated

Directions

1.Preheat oven to 180, and line a muffin tin with 12 muffin cases

2. In a large mixing bowl combine almond meal, sugar, walnuts, bi-carb, spices and chia seeds

3. In a smaller bowl, whisk together the egg, coconut oil, almond milk & vanilla until combined

4. Add wet mixture into dry ingredients, and mix in grated carrot. Mix well

5. Spoon mixture into muffin cases 

6. Pop in oven for 25 mins. Cool on wire rack before eating
